The Legacy of Jean Dauvissat
Established in 1955 in the quaint village of Milly, just minutes from Chablis, the Domaine Jean Dauvissat began as a humble grape-growing venture. Jean Dauvissat, the founder, dedicated his efforts to cultivating high-quality grapes, which were sold to larger négociant houses. This focus on viticulture laid a robust foundation for the domaine's future.
The vineyards, encompassing over 22 hectares across seven communes, are planted on the renowned Kimmeridgian limestone soils. This unique terroir imparts a distinct minerality to the wines, a hallmark of Chablis. The domaine's commitment to quality and respect for the land has been a guiding principle since its inception.
Fabien Dauvissat’s Vision
In 2009, Fabien Dauvissat, Jean's grandson, assumed control of the domaine with a clear vision:
- Transition to Organic Farming: Recognizing the importance of environmental stewardship, Fabien ceased the use of pesticides and synthetic chemicals, initiating a shift towards organic viticulture. By 2014, the domaine was practicing organic farming, motivated by a desire to protect the health of vineyard workers and the ecosystem.
- Biodynamic Practices: Embracing biodynamic principles, the team began incorporating holistic farming methods, including the use of horses for plowing and planting cover crops like vegetables and legumes to enhance soil biodiversity.
- Natural Winemaking: In the cellar, Fabien emphasizes minimal intervention. Grapes are harvested at optimal ripeness, undergo natural yeast fermentation in stainless steel tanks, and are aged on lees for 18 to 24 months. This approach allows the true character of each parcel to shine through, resulting in wines that are expressive and authentic.
