The 2017 Domaine de l'Amandyere l'Indomptable, made from over 35-year-old Carignan vines at the foot of the Alaric Mountain, displays an intense dark garnet colour with blue highlights. The nose reveals a complex array of aromas, including ripe blackcurrant and blueberry, fresh root and bramble notes, and lively floral hints that emerge with aeration. On the palate, it is elegant and full-bodied, with perfectly mellowed tannins providing a velvety structure, balanced by freshness that lifts the rich, mature fruit flavours. Its fine, persistent finish and harmonious complexity make it a sophisticated wine to enjoy at 13–14°C, ideally decanted in generous glasses, and perfectly paired with robust meats such as lamb, beef, or bull.
