
Bastian Wölber, Laisse Tomber
Bastian Wolber was born in Staufen im Breisgau, Germany, and attended Rudolph Steiner schools until the age of 18. Inspired by his older brother, Bastian followed in his footsteps and began working vintages in Burgundy. He got his start at Domaine Leflaive in 2013, where he developed a vision of one day making his own wine. To broaden his experience, Bastian worked harvests with notable winemakers, including Rudolph Trossen in the Mosel and Jean-Marc Dreyer in Alsace. His journey came full circle in 2019 when he apprenticed under the legendary Jean-François Ganevat in the Jura region. Later that year, Bastian returned home to begin his own winemaking project. He sourced organically farmed grapes from France and Germany and vinified them at Wasenhaus. He named his project “Laisse Tomber,” a French phrase meaning "let it go" or literally, "let it fall." Because his initial 2019 production was too small to sustain him full-time, Bastian decided to return to Burgundy to deepen his expertise. He enrolled in a diploma program in enology at the Université de Bourgogne in Dijon while working alongside the renowned Jean-Yves Bizot. Today, he continues to refine his craft there.
