Pinot Noir from 55-year-old vines planted on a 20-acre plot, a Premier Cru facing South/South-East, just outside Savigny-lès-Beaune. Harvested by hand, meticulously sorted, destemming while keeping around 15% whole bunches, cold pre-fermentation maceration for 3 to 4 days, start of fermentations without any inputs, gentle pressing, 12 months of aging in French oak barrels, with 20% new oak.
