A brilliant and clear robe, with hints of youthful green reflections. A floral, "spring-like" nose of mentholated white peaches, expresses the purity of Vermentinu. A full-bodied palate that confirms the nose: lemon, grapefruit, iodized and saline notes, freshness, and minerality with great tension, leading to a pleasant finish typical of a great Corsican white wine. Its qualities will reveal themselves after a few months of aging (around 8 months) and it will require slight aeration to fully open up. The finesse of its bouquet, its complexity, and its long finish make it more of a dining wine, best paired with dishes such as sweetbreads, blanquettes, lake fish, or cooked shellfish.
