It displays a pale yellow colour and a highly expressive nose of citrus, including grapefruit and Sicilian lemon. On the palate, it is exceptionally fresh and mineral-driven, with zesty lemon notes and a crisp, lively attack. The wine’s balanced acidity and refined structure make it a perfect companion for iodized seafood such as sea urchins and sea potatoes, or a delicately sauced pork côte de Bigorre, served at 10–12°C to showcase its elegance and freshness.
